How to Make It:
Cook & Shred the Bird: Simmer the whole chicken in a large pot of salted water (with half an onion and cilantro stems) for 45 minutes until tender, or roast it at 425°F. Shred all the meat off the bone into a bowl and season with salt and pepper. (Save the broth for later!)
Prep the Toppings: Finely dice the remaining white onion, chop the cilantro leaves, and slice the fresh avocado.
Warm the Tortillas: Warm the Guerrero corn tortillas in a dry skillet over medium-high heat until soft and lightly toasted.
